It’s the day before St. Patrick’s Day and maybe you’re thinking that you missed the boat on planning that big corned beef dinner with potatoes, cabbage, and all the fixin’s. But don’t despair. You still have time.

It really is simple to put together this whole meal – it ALL goes in the slow cooker! Just toss all the ingredients in before go to work and you’ll have a complete meal ready for you without having to lift (much of) a finger at dinner time. One of these days I would really like to brine my own, but for now this is a delicious, easy alternative!

I make this easy dish year-round because my guys loooooove their corned beef! I even stock up on the corned beef when they are on sale around this time of year.

The other great thing about this recipe is that it is not so much a recipe as it is a guideline – add what you like or what you have on hand, no need to measure, and all you really need is the corned beef and the water 🙂

Here’s what I put in the slow cooker, in order:

  • 1 whole onion – peeled and quartered
  • 4-6 red potatoes – cleaned and quartered (or halved, your preference)
  • 4-6 carrots – scrubbed and cut into 2″-3″ pieces
  • corned beef (I prefer the flat cut over point cut  – whatever size you like)
  • contents of flavor packet from the corned beef
  • 2-3 whole, peeled cloves of garlic
  • 2-3 bay leaves
  • about a teaspoon of black peppercorns
  • some fresh or dried herbs you have on hand – parsley, oregano, thyme, etc.
  • 2/3 cups of water (can also add a bit of a good Irish beer if you like)
  • head of cabbage cut into about 6-8 wedges

Place the potatoes, carrots, onion and garlic at the bottom (making a well for the corned beef to fit down into) then add the beef. Toss contents of the flavor packet, bay leaves, peppercorns and additional herbs on top of the meat. Pour water over the top.

Cover and cook on low for 10-12 hours.

The cabbage can be added in the last hour or so – it does not take long to cook.

A little tip: Sometimes I run out of room but love the flavor of the cabbage when it’s cooked in the beef juices, so I just ladle some of the juices out of the crock pot into a saucepan and steam my cabbage in the saucepan instead.
